Jay Annapurna Maa! Tasty curry in the feast changes everything. For a party of 15-20 people here is simple curry recipe you must try.
Ingredients
1 kg cauliflower cut in small florets, 250 gram peas fresh or frozen, 6 tbsp plain cashew nuts, 3 tsp cumin seeds, 250 gram tomatoes finely chopped, 1 ½ tsp chilli powder, 1 ½ tsp turmeric powder, 1 tsp salt, 2 tbsp oil.
For masala
15 peppercorn, 2 inch broken cinnamon, 10 cloves, 1 tbsp coriander seeds, 150 gram finely chopped onions, 300 gram freshly grated coconut, 3 tbsp oil.
Preparations
For making masala
1. Heat oil in a deep frying pan, When hot add peppercorn, cinnamon coriander seeds, cloves and fry for a minute or two. Remove fried whole spices from frying pan and set aside.
2. In the same oil, heated again, fry onion till translucent. Add grated coconut and stir fry till brownish. Remove from heat and allow to cool to room temperature.
3. Grind the mixture in grinder, adding little hot water to a coarse paste. Remove masala paste from grinder and set aside.
Method
1. Heat oil in a deep frying pan. When hot add cumin seeds. When splutter, add cauliflower, peas and cashew nuts and stir fry for a few minutes. Add tomatoes, chilli powder, turmeric powder and salt. Stir and mix well. Cover and cook till cauliflower and peas are done.
