Puran poli

 Jay Annapurna Maa friends! Here is recipe of mouthwatering puran poli for you. It is Maharashtrian dish and usually made on festivals like Pola, Gauri Ganpati, Holi, Gudi Padwa, etc.


Ingredients

For puran:

3 cups Chickpea lentil (chana dal),

3 cups jaggery - either crushed or grated. (You can use sugar but jaggery is healthy option)

1 tsn cardamom powder 

1 tsn saunf powder

¼ nutmeg (jaayfal) - use grater of smallest holes to use it.

1 cup milk

For Dough:

2 cups flour,  

Water as required, 

Pinch of salt.

Oil - 1 tsn

Method:

Dough:

In a bowl or in deep platter (paraat) take the flour, add pinch of salt in it and and knead well to make a stiff dough. Then pour 1 tsn oil on it and spread this oil around the dough. Cover it and keep aside for 2 hours. 

Puran

In a pressure cooker pot take the chickpea and wash it well 2 to 3 times. Then add atleast 6 to 7 cups of water to it and cook it in cooker. Let it cook till soothing smell of the cooked lentils come. 

After pressure cooking let the lentils cool down itself. After cooling strain out the excess water. In a mixer grinder pot take these lentils and grind to a fine paste. Add grated jaggary while grinding.

Add the paste to the pan and add ghee in it and cook this paste till a fine yellowish golden colour comes. The paste should to cooked till it becomes thick enough to make a ball. If the paste is dry and still there is no golden colour then ad some milk in it. 

Now let this cool down for some time. Add cardamom powder, saunf powder and grated jaayfal in it and mix well and again let it cool to room temperature.

Puran poli

Now take a the dough and mince it to a smooth consistency.

Take a piece of dough roll it with rolling pin (Belan) to make a chapati of it. Then keep the puran ball of size of lemon on it and stuff it in the chapati and seal it by removing excess dough. Make a dough ball stuffed with puran in this way.

Now roll this dough ball with light pressure on rolling pin and your raw puran poli is ready.

Put this rolled poli on griddle (tawa) and heat it till it turns somewhat creamish brown. Apply ghee on one side and heat it from that side. Then apply ghee on other side and heat it.

Serve hot in the plate full of curry, kadhi, salad and chutany along with onion pakodi. Also serve ghee on it or milk in a bowl with poli.

Health aspect:

If puran is made using jaggary then it is healthy in its own way. But if you are using sugar then it is high in calories. 

It is rich in carbohydrates and potassium.
